  • Establishments in Illinois must have a certified Food Service Sanitation Manager on premises at all times.
  • The Illinois Department of Public Health no longer issues Food Service Sanitation Manager Certificates . However, applicants are still required to complete an approved 8-hour training course and pass an ANSI-CPFM approved Certified Food Protection Manager exam, such as the ServSafe exam.
  • Certification is valid for 5 years.
If you work in Chicago, you must also get a Food Service Sanitation Manager Certificate issued by the City of Chicago.

NEW! Food Service Sanitation The ServSafe Manager Online Course is ideal for individuals who wish to prepare to take the ServSafe Food Protection Manager Certification Exam. This interactive course has been designed using the latest techniques in learning theory, to deliver current food safety information, in a fun and easy-to-use format. The course covers critical principles including: personal hygiene, cross contamination, time and temperature, cleaning and sanitizing, and more. A practice exam is included at the end of the course to help prepare for the proctored ServSafe Manager Certification exam. All purchases of the ServSafe Manager Online Course are final. Once you begin the course, you will have 90-days to complete it, at which time the course will be deactivated. Paper/pencil exams will be administered at the IVCC Main Campus and/or IVCC Ottawa Center after completion of the IVCC online course. You will select your exam date from a list of options provided by the college. Equipment needs: computer and internet access.

What Are The Responsibilities Of A Certified Food Manager

It shall be the responsibility of the certified manager or managers to inform all employees under their supervision and control who engage in the storage, preparation, or serving of food, to do so in accordance with acceptable sanitary practices as described in the Food Hygiene Rule: Chapter 64E-11, Florida Administrative Code.

Establishments that serve highly susceptible populations , or that have three or more employees at one time engaged in the storage, preparation or service of food, must have at least one certified manager present at all times when these activities are taking place.

All other establishments must have a certified manager or managers responsible for all periods of operation but the manager or managers need not be present at all times.

What To Expect On Test Day

If you are taking your ServSafe exam online at home, you will need to be able to log in to your account and follow the provided instructions. If you are taking the exam in a classroom setting or testing center, there are several standard test-taking rules youll be expected to follow. Cell phones, scratch paper, books, and personal items are not allowed in the testing area, and if you need to use the restroom during the test you must raise your hand. Keep in mind that only one person is allowed out of the room at a time, so if someone else from your group had the same idea, you will have to wait. Be sure to bring along a as it will be collected before the exam and returned to you after you are finished.

What Are The Illinois Food Safety Regulations

In Illinois, you can find training and certification requirements for food safety in the Food Handling Regulation Enforcement Act . The Act states that food service establishments must always have at least one certified food manager on hand at all times. Otherwise, you could face penalties.

Additionally, the Illinois Department of Public Health has recently amended the Act to eliminate the Illinois Food Service Sanitation Manager Certification . Beginning January 1, 2018, you are no longer required to also apply for an FSSMCexcept in the city of Chicago.

What Certificate Do I Need

  • A Mobile Prepared Food Vehicle at a special event does not need a SFFVC but must have valid City of Chicago Food Service Sanitation Certificate.
  • No SFFVC or City of Chicago Food Service Sanitation Certificate is required for a person operating a Mobile Food Dispenser vehicle with only prepackaged food.
  • No SFFVC or City of Chicago Food Service Sanitation Certificate is required for a person operating a booth with only prepackaged, non-time/temperature for control for safety foods .
  • Booth or vendors that provide samples of food may be required to obtain a SFFVSC.
  • CDPH may require an event organizer to obtain a SFFVC.

Certified Food Protection Manager Certification

Formally called the Food Service Sanitation Manager Certification, this program meets the eight-hour coursework and examination requirement set by the Illinois Department of Public Health for the Certified Food Protection Manager certification. Recertification is required every five years.

The course is taught over two days, and the exam is administered the second day. A photo ID is required for the exam. Participants have an hour for lunch on their own. The program fee of $100 covers all the supplies & the exam. If a reader or translator is needed, contact the National Registry of Food Safety Professionals by or call 800-446-0257.

The course and exam are through the National Registry’s ANSI-Accredited Food Safety Managers Certification program. If the employers require the same certification through ServSafe, please contact Lisa Peterson for accommodations.

If the class has less than five people registered, the course will be canceled, participants will be notified and refunded. If the dates, times, or location does not work and there is an audience of 5 or more people who would like the certification please contact for accommodations.

Servsafe Food Handler Certification Exam

The ServSafe Food Handler program is designed to teach food safety to non-management food service employees. The training covers all areas of food safety, including: basic food safety, personal hygiene, cross-contamination and allergens, time and temperature, and cleaning and sanitation. Some food service employees may be asked to take an optional job specific section as directed by their manager. The course takes approximately 60 to 90 munutes.

The ServSafe Food Handler Exam is an untimed 40 question test. To receive a ServSafe Food Handler certificate, you must score better than 75% .
